Thai Name: Khao Niao (ข้าวเหนียว)
Origins: Khao Niao — Thai Sticky Rice — is one of the oldest and most culturally significant foods in all of Thailand and across much of Southeast Asia. While jasmine rice is the everyday staple of central and southern Thailand, sticky rice is the rice of the northeast — the Isan region — and of the north, where it has been eaten as the foundation of every meal for thousands of years and where its absence from the table would be as unthinkable as a Thai meal without chilli. Unlike regular rice which is boiled in water, glutinous sticky rice must be soaked for several hours before cooking to allow the grains to fully hydrate, then steamed rather than boiled — a process that transforms the starch structure of the grain and produces that characteristic soft, chewy, slightly translucent texture that no other rice can replicate. The result is a rice that clings to itself, moulds to the hand and absorbs sauces and dressings with remarkable efficiency — making it the ideal companion not just for eating alongside dishes but for eating as part of them, rolled between the fingers and used directly as a scoop, a vessel and a flavour carrier in a way that a fork and a pile of jasmine rice simply cannot achieve.
Our Version: At Sireeya’s Taste of Thailand, Khao Niao is prepared the proper way — soaked for several hours before being steamed to the exact texture that makes sticky rice worth eating. Not too firm, not too soft — the grains distinct enough to roll in the hand without disintegrating but sticky enough to hold their shape and cling to whatever they are pressed against. The way to eat it is simple and deeply satisfying: roll a small portion between your palms until it forms a compact ball, press it into your curry, dip it into your sauce, or use it to scoop up a piece of grilled meat or salad — and discover immediately why the people of northeastern and northern Thailand have eaten this way every day for centuries and see no reason to change.
What You Get: A generous portion of freshly steamed Thai sticky rice — Khao Niao — soaked for several hours and steamed to perfect soft, chewy texture. Roll it in your hands and dip into your favourite dish.
Thai Sticky Rice is the most hands-on, immersive and authentically Thai way to eat — here are four dishes that pair with it most naturally and most memorably.
🍗 Moo Ping
The most beloved street food pairing in Thai culture and the combination that launched a thousand Bangkok breakfast stalls. Moo Ping — Sireeya’s handmade sweet glazed pork skewers grilled to order with a caramelised marinade — and sticky rice is the pairing that defines Thai street food eating more than almost any other. Across Thailand from early morning markets to late night stalls, vendors sell these two things and nothing else because nothing else is needed. The sweet, caramelised pork marinade soaking into the soft glutinous rice as you press them together is one of the simplest and most perfect things Thai food has to offer
🥗 Som Tam Thai
The most iconic and authentically Thai pairing in the entire menu — a combination so deeply embedded in the food culture of northeastern Thailand that Som Tam and Sticky Rice are considered a single dish rather than two separate ones by the Isan people who eat them together every day. You press the sticky rice against the bold, tangy, fiercely chilled papaya salad dressing, let it absorb the lime juice and fish sauce pooled at the bottom of the bowl, and eat them together in a mouthful that is simultaneously fierce, fresh and deeply comforting. If there is one pairing on this entire menu that every customer should try at least once, it is this one — and once tried it is impossible to forget.
🌶️ Larb
Larb and Sticky Rice is the other great Isan pairing — the fierce, herby minced meat salad with lime, dried chilli, shallots, mint and toasted rice powder finding its essential counterbalance in the soft, neutral glutinous rice that absorbs the bold dressing and carries it through in every mouthful. In northeastern Thailand, eating Larb without sticky rice is not done — the two are inseparable by tradition and by flavour logic, each making the other taste more complete. Roll the rice, press it into the salad and eat them together exactly as Sireeya would — with confidence, without cutlery and with complete satisfaction.
🍛 Massaman Curry
A less obvious pairing than the Isan classics above but one that rewards the adventurous customer with something genuinely unexpected and deeply satisfying. Sireeya’s Massaman Curry — rich, slow-cooked and made with authentic curry paste sourced directly from Koh Lanta in Southern Thailand — is usually paired with jasmine rice, but sticky rice alongside it produces a completely different eating experience. The glutinous grains absorb the thick, spiced coconut sauce more slowly and more completely than jasmine rice, releasing it gradually through the chewing in a way that allows the full complexity of the Koh Lanta paste — the cardamom, cinnamon, star anise and dried chilli — to reveal itself more fully and more memorably than any other accompaniment. A pairing that surprises and then completely convinces.
