Origins: Sai Krok Isan is one of the most iconic and culturally significant street foods to come out of Thailand’s northeastern Isan region — a dish so deeply embedded in the daily food life of northeastern Thailand that it is impossible to walk through an Isan market, roadside village or night bazaar without encountering the unmistakable aroma of fermented pork sausages sizzling over charcoal. The fermentation process that defines Sai Krok Isan is ancient and completely distinctive — minced pork, sticky rice and garlic are mixed and left to ferment naturally for two to four days, during which the sticky rice acts as a fermentation agent and the mixture develops the deep sour tang, rich funky aroma and complex layered flavour that no unfermented sausage can replicate. The result is a sausage unlike anything found elsewhere in world cuisine — juicy and slightly chewy inside from the sticky rice, perfectly caramelised and smoky outside from the charcoal grill, and carrying that characteristic Isan sourness that is simultaneously challenging on first encounter and completely addictive from the second bite onward. Sai Krok Isan is a product of a specific fermentation tradition, a specific regional knowledge and a specific set of conditions that belong to the Isan region of Thailand — and Sireeya’s commitment to authenticity means she would rather bring the genuine article from Thailand than produce an approximation in Burton-on-Trent. Our delivery schedule is Thursday to Monday, 4:30pm – 9pm (Tuesday and Wednesday we're closed). Earlier deliveries on weekends may be possible — please get in touch.
