Thai Name: Choo Chee Pla (ฉู่ฉี่ปลา)
Origins: Choo Chee is one of the most elegant and distinctive preparations in the entire repertoire of Thai curry cooking — a thick, intensely reduced curry sauce made with coconut milk, red curry paste and kaffir lime leaves that is spooned over rather than cooked around the protein, coating it in a rich, aromatic glaze that concentrates every layer of flavour into something far more complex and refined than a standard curry. While Choo Chee is made with various proteins across Thailand, Choo Chee Pla — with whole fish — is the version most celebrated along the coastal regions and seafood markets of the Gulf of Thailand and the Andaman Sea, where the combination of fresh whole mackerel and a properly made red curry sauce is considered one of the finest expressions of Thai seafood cooking that exists. It is a dish of genuine sophistication that demonstrates the full depth and subtlety of Thai curry technique at its most assured.
Our Version: At Sireeya’s Taste of Thailand, Choo Chee Pla is made with two whole mackerels cooked in a rich, aromatic red curry sauce built from coconut milk, kaffir lime leaves and fragrant Thai herbs — the sauce reduced and concentrated until it coats the fish in a thick, glossy coating of deep southern Thai flavour. Mackerel is the ideal fish for this preparation — its robust, oily flesh stands up to the intensity of the red curry sauce without being overwhelmed by it, and the natural richness of the fish and the richness of the coconut curry create a harmony of flavour that more delicate fish simply cannot achieve. This is a dish for customers who want to experience Thai seafood cooking at its most authentic and most accomplished — and at Sireeya’s, it is made with the care and confidence that a dish of this quality demands.
What You Get: Two whole mackerels cooked in a rich, aromatic red curry sauce with coconut milk, kaffir lime leaves and Thai herbs. A celebration of authentic Thai seafood cooking.
Choo Chee Pla is rich, aromatic and deeply sophisticated — here’s what our customers love ordering alongside it to build a complete and memorable Thai meal.
🍚 Coconut Rice
The most natural and indulgent pairing for Choo Chee Pla and the one that does fullest justice to the richness of the red curry sauce. Coconut Rice — fragrant jasmine rice simmered gently in creamy coconut milk — shares the same coconut base as the Choo Chee sauce and creates a harmony of flavour across the plate that feels completely cohesive and deeply satisfying. The gentle sweetness of the coconut rice absorbs the thick, spiced curry glaze from the mackerel in a way that plain rice simply cannot match — every forkful becoming richer and more flavourful as the two elements combine. A pairing of pure indulgence that is completely justified by the quality of the dish it accompanies.
🥗 Yam Wun Sen Talay
A seafood-to-seafood pairing of genuine elegance and authentic Thai spirit. Yam Wun Sen Talay’s fiery glass noodle seafood salad — sharp, tangy and vibrantly dressed with lime, chilli and fresh herbs — provides a bold, acidic counterpoint to the rich, creamy depth of the Choo Chee Pla sauce that is both invigorating and completely complementary. Both dishes celebrate the finest Thai seafood cooking from completely different directions — one rich and enveloping, one bright and fierce — and together they create a meal that explores the full range of what Thai coastal cuisine can achieve in a single order. A combination that serious seafood lovers will find deeply rewarding.
🌿 Pad Kra Pao
A pairing that works through the art of contrast and complementary intensity. Pad Kra Pao’s fierce, smoky holy basil stir fry with garlic, chilli and oyster sauce brings a completely different kind of bold to the table alongside Choo Chee Pla — where the fish curry is rich, aromatic and coconut-based, the basil stir fry is dry, fierce and herbaceous. Together they cover every corner of the Thai flavour map in a single meal — creamy and spiced alongside smoky and herby — creating a combination that feels genuinely complete and satisfying from the first mouthful to the last.
🥢 Goong Hom Pha
Five handmade crispy wrapped prawns make an inspired starter before Choo Chee Pla — setting the meal on a seafood theme from the very first bite and building anticipation for the whole mackerel course that follows. The crispy golden shell of the Goong Hom Pha gives way to sweet, tender prawn that shares the same coastal Thai spirit as the mackerel curry, while the sweet plum or chilli dipping sauce provides a lighter, fresher flavour note that clears the palate perfectly before the rich complexity of the Choo Chee sauce arrives. A seafood journey from starter to main that feels considered, coherent and completely authentic.
